The chef grills snails from the Alpilles, cooks a cassoulet with AOP Tarbais beans, a Thai salad with marinated beef and fresh herbs, and a walleyed sea bream with vegetables and tellin marinara. Whether classic or exotic, the dishes have one constant: they are excellent.
